diverXO

Let’s start with a restaurant in Madrid that Michelin stars come easy to. It is diverXO, run by the popular chef Dabiz Muñoz. It has been open since 2007 and offers a fusion of artistically inspired flavours from all over the world. It is a real culinary experience, validated by it having been awarded three Michelin stars.

It is located in the NH Collection Eurobuilding hotel, and along with its unique and unbeatable menu, it also has a very original decor. Its tasting menu is called The Flying Pigs Cuisine. And if there is one thing we are sure about, it is that diverXO is all about originality. That is why it is the restaurant that everybody is talking about.

DSTAgE

With Diego Guerrero and two Michelin stars, DSTAgE is another must visit for those looking for an exclusive restaurant in Madrid. The chef’s experience is validation enough, as he has previously been awarded two Michelin stars at the Club Allard restaurant.

DSTAgE is a modern establishment, with the appearance of an industrial penthouse. The chef greets diners himself, offering them aperitifs Once sat at their table, they can choose from one of two menus: the DSTAgE, which has 15 dishes; and the DENJOY, which has 18. In both cases there is a combination of traditional Spanish, Japanese, and American cuisine. What better reason to book a table there?

Santceloni

Run by Omar Velasco, who in his day was an apprentice of the restaurant’s founder Santi Santamaría, Santceloni has two Michelin stars. It is located in the Hotel Hesperia Madrid, in the middle of Paseo de la Castellana, with an elegant and exclusive decor designed by Pascua Ortega.

Among some of its most famous dishes are the sirloin with truffle and guacamole and grilled langoustines, although the cherry on top is the incredible variety of cheeses offered after your meal. Santceloni is, without doubt, a unique restaurant which no foodie should miss out on.

Coque

Coque is more than a restaurant, it is the home of the Sandoval brothers, who can claim to be the only family with three Spanish National Gastronomy Awards (kitchen, bodega, and lounge), in addition to two Michelin stars. These acclaims speak for themselves and tell us that getting a table at Coque is much more than just going for a meal.

The experience starts at the cocktail bar, where you can enjoy an aperitif. Then you can head to the bodega, where Rafa welcomes diners with a little taster of what is to come. You then head through the kitchen, where Mario Sandoval is waiting for you. Finally, Diego Sandoval leads diners through to the lounge, where they are able to get comfortable and sample the menu. Paco Roncero Restaurante

On the tenth floor of the Casino de Madrid is Paco Roncero’s restaurant, a former star student of Ferran Adrià. Its privileged location is a real highlight, along with its spectacular terrace. Eating well is always a pleasure but eating in this setting goes one step beyond.

However, the fact that this restaurant has two Michelin stars is down to its amazing cuisine.
