This is a restaurant with real history, the chef Diego Guerrero ran it up until 2013. He then left it in the hands of his student María Marte del Rosario, who more than held her own. Since 2018 it has been in the hands of chef José Carlos Fuentes, who has upheld the restaurant’s qualities and good practices.
